This comes off a bit whiny. And I'd argue if you're raiding with just 1 paladin, then you have no right complaining about difficulty -- you're already gimping yourself by only having one judgement available. It would be different if it required 4 or 5 paladins. (It doesn't)
Anub is still the encounter that most breaks the class-symmetry mentality that Blizzard were so keen to promote in WotLK. 2 of the 4 tanking classes are completely unable to tank the adds. This I believe is a reason of a technical glitch / implementation error on their part which causes block to be much more useful than it should be, rather than the intended way to beat this fight. Add the need for bops - I'd like to see a kill with 1 paladin, for instance. Finally the discrepancy between healer classes is quite glaring in P3, but Blizzard are happy to promote this variance unlike in tanks so that's not a design fault.
All in all Anub is a glaring failure, the end boss of a raid instance being so undertuned (see: block)? That wouldn't have flown anywhere else, but this is ToTC - king of the filler content. Its only saving grace is that the hard phase is not short enough to be cheesed by BL (when is this going to be removed already?).
